I made this up! So yummy and no pot to clean.
Potatoes and Beets
preheat oven to 400
lay sheet of tin foil
spray with Pam or olive oil
add sliced potatoes
add sliced beets
add sliced onion
add pinch or sea salt & pepper
add spice or herbs of your choice
add one table spoon butter (for vegan use olive oil)
bake 30 minutes
dump on plate and enjoy
